Stuffed apples with Cheese and minced chiken

Serving 4 portions








Ingredients:

4 green apples
100 gr of goat cottage cheese (any cottage cheese would work.
4 slices of chedar cheese or light emental.
250 gr of minced deboned chiken breast.
A chalotte or a litte onion,
Salt
Pepper
Cumins (just very little).
A table spoon of honey.
A lemon or lime.
Olive oil to fry the onion and the chiken.

Process:

Cut the top of the apples, and remove the seeds . Inmediatelly spread lemon juice on all the parts of the internal parts of the aple including the “cap” to avoid oxidation.

Chop de challote or onnion in very little parts.

Put a pan on a stove with olive oil and sautee the onion, with a medium strengh fire, keep on stiring the onions, do not let them get brown, just with and sort of trasnparent, add the minced chiken till is done to your taste (medium, should be fine). Salt and pepper it. Remove from the fire.

Put the onion and chiken on the botton of the apple. Then a layer of tha cottage cheese some pepper, cumins and honey,  another layer of chiken, and then cheese fill the entire apple, cover it with the chedar slice and honey, and on top on the honey a bit more of cottage cheese (to hel the cap to saty steday on top ) put the cap .

Bake them at a low temperature 170 C for a bout 15 minutes, or idealy esteam them untill they are medium-soft, do not over heat or cooke them, they should be in the same texture you ate them in here, so a bit “al dente” but soft.

For the Sauce (optional).

You can serve it as I did, with a light cheese sauce,

Take a bit of cheddar cheese and a bit of sour cream and bring it to boil for a couple of seconds, stiring the mix contineouly, add a bit of pepper, blend them well, and just put a bit of the creammy sauce on the bottom of the plate, then place the aple on top.
